Alexander’s Favorite Salad – The Caprese

Just to prove the point that you NEVER know what your child will eat, I present to you Alexander’s favorite salad:

Never woulda thunk it – but then again, he is changing every single day…..

Caprese Salad 

3 ripe tomatoes, cut into 1/4-inch thick slices
1 pound fresh mozzarella, sliced into 1/4-inch thick slices
20 to 30 leaves fresh basil
Extra-virgin olive oil, for drizzling
Coarse salt and pepper

Layer alternating slices of tomatoes and mozzarella, adding a basil leaf between each, on a large, shallow platter. Drizzle the salad with extra-virgin olive oil and season with salt and pepper, to taste.

    I suck. I just went looking through a bunch of your last posts and realized I don’t think I’ve been here for a few weeks. I went clear back to the post with Sabrina’s snickerdoodles before I remembered seeing that one. But I was sure enjoying everything that is new since then. I want–some of the biscotti, those artichokes and caprese salad is probably my favorite, too. Can’t wait for my basil to be planted and ready to eat.
    I feel like I haven’t been getting the email updates for your posts like I was. In fact, a couple days ago I thought “Megan hasn’t posted for a while”. Going to need to check on that. ;)
