The other morning, I had to admit to myself that I’ve become obsessed.
admitting is the first step to resolving, right?
My primary obsession these days? Pinterest. I know, I know….. I’m late to the party on this one, but holy cow that site is amazing! So many ideas, so much inspiration – it’s hard to know when to stop. Well, I’ll tell you exactly when it’s time to stop – when you realize an hour has passed and your eyes are dry from not blinking……
not that I’ve ever had that happen to me…….
My second obsession these days is making quick breads.
They’re just so easy…….. so easy to make, and so easy to grab a slice as I’m running out the door to work.
Because I’m late once again from browsing on Pinterest all morning……..
Flour’s Famous Banana Bread
1 2/3 cups all-purpose flour
1 tsp baking soda
1/4 tsp ground cinnamon
1 cup plus 2 tbs sugar
1/2 cup oil
3 1/2 bananas, very ripe, mashed (1 ¼ cups)
2 tbs sour cream
1 tsp vanilla extract
2/3 cup walnuts, toasted and chopped
Set oven to 350 degrees F. Grease a loaf pan and set aside.
Sift together the flour, baking soda, cinnamon and salt. Beat sugar and eggs with a whisk until light and fluffy, about 10 minutes. Drizzle in oil. Add mashed bananas, sour cream and vanilla. Fold in dry ingredients and nuts. Pour into the prepared loaf pan and bake for about 45 minutes to 1 hour.
