I don’t know about the rest of you, but I am NOT looking forward to school starting. Where did the summer go? How can it be over so fast? Who turned the calendar when I wasn’t looking? I was finally able to reset my internal clock to sleep past 5 a.m….. and now I have to start all over again?
Although we didn’t travel as much as we did last summer, we certainly accomplished a lot and thoroughly enjoyed ourselves. Boating/jet-skiing at the lake, friends in and out of the house, barbeques, sleepovers, painting/home improvements, Sabrina learning how to drive…..
Wait—- what was that last one?
Yep – we started a few rudimentary driving lessons. First in the Tahoe…..then in the V-Dub…. and she did great. Of course, driving isn’t the hard part, it’s watching out for everyone else that’s difficult.
And stopping at stop signs….that is generally a good idea……
Anyway, now that I have to start thinking about packing lunches again, I realized it was time to bake a batch of these granola bars for her. Store bought are out of the question (her nut allergy) – and these are infinitely customizable. No rice krispies? Crush up a handful of corn flakes. No coconut? Throw in a handful of wheat germ. Don’t want to add chocolate? Raisins are just as tasty. And of course, if you like nuts, feel free to add those as well.
Let the morning rush begin…..
Chewy Granola Bars – adapted from Abby Sweets
2 1/2 cups oatmeal
1/2 cup Rice Krispies
1/4 cup coconut
1/2 cup chocolate chips
1/2 cup butter, softened
1/4 cup honey
1/2 cup brown sugar
1 tsp. vanilla
In a large bowl, using an electric mixer, beat the butter with the honey, brown sugar and vanilla until well blended.
Add the remaining ingredients and mix together until combined. Press into a square 8×8 pan. Bake at 350° for 18-20 minutes. Cool for 10 minutes and score into bars. Let set completely and then cut into bars.
