A few days ago, I saw this quote on Pinterest (I know, I know!) …….. and it literally made me laugh out loud.
Even now, every time I read it, I can’t help but laugh again:
“When someone says, ‘Expect the unexpected’, slap them in the face and and say, ‘You didn’t expect that, did you?’.”
ba ha ha ha ha ha ha ha ha ……..
Silly stuff, I know…. but hey, laughing at least once a day is good for you.
Wouldn’t that be crazy to actually do that to someone? I mean, I can think of a few people that I’d like to slap across the face…. their reaction would be priceless..

Since we’re on the topic of unexpected things, this quick bread is an unusual combination (unusual for me, that is) of raspberries, chocolate and bananas ~ and it caught me completely off guard. I never would have thought to put them together ~ yet it works.
And the best part? No slapping involved. I promise.
Raspberry Chocolate Chip Banana Bread – adapted from Recipe Boy
2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup granulated sugar
4 tablespoons (1/2 stick) unsalted butter, at room temperature
2 large eggs
1 1/2 cups mashed ripe banana (about 3 bananas)
1/3 cup sour cream
1 teaspoon vanilla extract
1 cup chocolate chips
1 cup raspberries, tossed in 1 tablespoon all-purpose flour
Preheat oven to 350°F. Spray a 9×5-inch loaf pan with cooking spray.
In a medium bowl, whisk together the flour and baking soda.
In a separate large bowl, beat the sugar and butter with an electric mixer at medium speed until well blended (about 1 minute). Add the eggs one at a time, beating well after each addition. Add the bananas, sour cream, and vanilla; beat until blended. Gently stir in the flour mixture; until just barely blended…..don’t over-mix. Stir in the chocolate chunks and then gently stir in the raspberries.
Spoon the batter into the prepared pan. Bake for 50 to 60 minutes or until a wooden pick inserted in center comes out clean. Cool 15 minutes in the pan on a wire rack. Remove from pan and cool completely on the wire rack.
