Another day, another quick bread..
Don’t look at me like that.
I can’t help it. They’re so easy to make. Grab a slice and go. Convenient for these hectic mornings.
Pinterest browsing notwithstanding….
Who said that?
I swear, I can stop at any time…. but I don’t want to.
This bread, full of warming spices like cinnamon and ginger, makes me anticipate the fall season and cooler temperatures – which hopefully are right around the corner.
Chai Banana Bread – adapted from myrecipes
1 1/2 cups mashed ripe banana (about 3)
1/3 cup plain yogurt ( I used sour cream)
5 tablespoons butter, melted
2 large eggs
1/2 cup granulated sugar
1/2 cup packed brown sugar
10 ounce all-purpose flour (2 1/4 cups)
3/4 teaspoon baking soda
3/4 teaspoon ground cardamom
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1 teaspoon vanilla extract
Preheat oven to 350°.
Combine first 4 ingredients in a bowl; beat with a mixer at medium speed just until blended. Add sugars; beat at medium just until blended. Combine flour, baking soda, cardamom, cinnamon and ginger – add to banana mixture; beat just until blended – then stir vanilla into batter.
Pour into a 9 x 5-inch loaf pan coated with cooking spray. Bake at 350° for 65 minutes or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pan on wire rack. Remove from pan; cool.
