Banana Oatmeal Breakfast Bars


Where do you find it? Browsing recipes online? A new cookware gadget, perhaps? Or biking 12 miles yesterday morning?

Oh wait, that was me ….

Lately, my cooking/baking inspiration seems to be all over the map. Since restarting my blog, I’ve saved/printed/emailed so many recipes, most days I don’t have a clue where to begin.

And let’s not even talk about my Ipad food magazine subscriptions.

Since I already have an obsession with “grab and go” breakfasts (i.e. quick breads), these bars were a natural for me. Not too sweet, unlimited potential for changes, and super easy to make.
Banana Oatmeal Breakfast Bars – adapted from Serious Eats
2 cups old fashioned oats
1 cup sweetened coconut flakes
1/2 cup chopped almonds
1/2 cup chopped Trader Joe’s triple treat fruit mix (mango, cranberries and blueberries)
1/2 cup light brown sugar
2 very ripe medium bananas, mashed (about 3/4 cup)
3 tablespoons butter, melted

Preheat oven to 375°F. Grease a 8-inch square baking pan.

In a large bowl, stir together oats, coconut, almonds, and fruit mix.

In a medium bowl, mix together mashed bananas, sugar, and melted butter until combined.

Add banana mixture to oats and stir until evenly incorporated. Spread mixture into prepared baking dish.

Bake until bars are golden brown, about 25 minutes. Let cool, then cut into squares.
