Urban Legend aka Neiman Marcus Cookies

I’m making a list and checking it twice……..

To see who has been naughty or nice? Not exactly.

For Christmas presents? Wrong again.

The envelope please…….dun dun dun……. the correct answer is:

Cookies!

Each year at this time, I deliver boxes of cookies to the people and businesses that take care of me (and my dog, and my children) during the year. A sweet way to say “thank you”, as it were.

The trouble is, I have a tough time narrowing down exactly which cookies will be included in the boxes. I’m always inundated with ideas and options……..but these cookies, packed with oats and chocolate, somehow manage to make the cut every single time.

Because one thing I’ve learned over time, is that people tend to choose the cookies that are the simplest…..

Urban Legend aka Neiman Marcus Cookies

2 ½ cups oatmeal
2 cups all purpose flour
1 tsp baking soda
1 tsp baking powder
1 cup butter, room temperature
1 cup granulated sugar
1 cup packed brown sugar
2 eggs
1 tsp vanilla extract
12 oz. chocolate chips
4 oz. grated chocolate

Preheat oven to 375 degrees. Line 2 baking sheets with parchment paper and set aside.

Grind oatmeal to a fine powder and mix with the flour, baking soda and baking powder. Using an electric mixer, cream together butter and both sugars. Add the eggs, one at a time until well blended. Mix in vanilla and chocolates. Roll into balls and place two inches apart on the baking sheets. Bake for 10-13 minutes, or until lightly browned and the center is set.

Yield – about three dozen cookies, depending on size.
