Zucchini Apple Oatmeal Bread

I’ve got to tell you something astounding that I have learned over the past two weeks of winter break … are you ready? This whole “sleeping in” business…….. is awesome……. What a difference. I feel amazing every.single.day. I never realized how sleep deprived I was, until now. It’s going to be tough to get back into the school routine next week.

Very tough.

But that’s next week, no need to think about it today. Right now, today, I’m relishing every moment. Just like I resolved to do.

And I’m loving it. 🙂

Zucchini Apple Oatmeal Bread – adapted from Miriam Barton

1 ½ cups pureed raw zucchini (use a food processor!)
1/2 cup shredded apple
2 tbs. vegetable oil
1 egg
1 tsp vanilla
1 cup all purpose flour
1 cup rolled oats
1 cup packed brown sugar
1 tsp baking soda
½ teaspoon ground cinnamon

Preheat oven to 350 degrees. Spray an 8 or 9 inch loaf pan with nonstick spray and set aside. In a large bowl, stir together the zucchini, apple, oil, egg and vanilla.  In a small bowl,  whisk together the flour, oats, sugar, baking soda and cinnamon. Gently stir the flour mixture into the zucchini mixture just until blended. Spread the batter evenly into the prepared loaf pan.  Bake for about 55 minutes or until a toothpick inserted in the center comes out clean.
