Our favorite Pancakes

Opportunity and inspiration…….they present themselves in the strangest ways sometimes. You have to keep your eyes and your mind open – because you never know what might happen when you least expect it.

That’s my thought for today πŸ™‚


Our favorite Pancakes – adapted from the Ihop recipe

2 1/2 cups all purpose flour
1/2 cup granulated sugar
2 heaping tsp baking powder
2 level tsp baking soda
2 eggs
2 1/2 cups buttermilk
1/2 cup vegetable oil

In a large bowl, whisk together flour, sugar, baking powder and baking soda. In another bowl, whisk together the eggs, buttermilk and oil. Pour the buttermilk mixture into the flour mixture and whisk until blended. Spoon ladlefuls of batter onto a nonstick griddle. Cook until the underside is golden brown, then flip and cook until the underside is golden brown as well. Serve hot with lots of syrup!

  1. Dinner tonight, with eggs and bacon. πŸ˜‰ My husband would love it if I made some “real” pancakes instead of always using whole wheat or making them low fat, etc.
