I have a serious dilemma………… I used up the last of the applesauce for this bread.
You know, the homemade applesauce that I use to make my dad’s favorite Applesauce Spice Cake –
Shhhhhhh – don’t tell him though……I am making another batch today…..because I can’t run the risk of him not having his absolute favorite cake on hand…..
Zucchini Oatmeal Applesauce Bread – adapted from better homes and gardens
2 1/2 cups all-purpose flour
1 cup rolled oats
1 tsp baking powder
1/2 tsp baking soda
2 1/4 tsp ground cinnamon
1 1/2 cups sugar
1 cup unsweetened applesauce
1/4 cup butter, melted
1 tsp vanilla
2 cups shredded, unpeeled zucchini
Preheat oven to 350 degrees. Lightly coat a 9 inch loaf pan with cooking spray; set aside. Combine flour, oats, baking powder, baking soda, and cinnamon. In a large mixing bowl, beat eggs with electric mixer on medium speed for 2 minutes or until foamy. Add sugar, applesauce, butter, and vanilla. Gradually add the flour mixture, beating on low speed just until combined. Stir in zucchini. Spoon into prepared pan.
Bake for 1 hour or until a wooden pick inserted near the center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool completely on rack.
