Fettuccine Alfredo

First day of Spring Break…..and I managed to sleep in till 6:30.

And they said it couldn’t be done…

Well……having said that, it’s time for a 12 mile bike ride. Because as MapMyRide continues to not-so-subtly remind me, I haven’t logged any workouts in about 2 weeks.

Oh the shame…..

Fettuccine Alfredo – adapted from Rao’s Recipes from the Neighborhood

1 lb. fettuccine

1 stick unsalted butter

1 cup heavy cream

1 cup freshly grated Parmesan Reggiano cheese

3 large egg yolks

1/2 tsp black pepper

Bring a large pot of water to boil. Add the fettuccine and cook until al dente, about 10-12 minutes. Meanwhile, melt the butter in a saucepan over medium heat. Add 2/3 cup of the cream, the grated cheese and bring to a simmer. In a small bowl, whisk together the remaining cream, egg yolks and pepper and set aside. When the pasta is cooked, drain and return to the pot. Pour the cream sauce over and toss to combine. Add the egg yolk mixture and toss again. Serve hot with additional cheese.
