It’s been a longstanding, well-documented fact that bad things happen in threes:
First, I discover that Google Reader is being shut down.
Second, I learned last week that my absolute FAVORITE store in the world is closing down here in Vegas. (That would be Michael Stars).
Third, I received an email from Itunes last night advising me that my subscription to Everyday Food is being refunded, because they have ceased publication!
It’s craziness all around, I tell you.
Spinach Cheddar Strata – adapted from Everyday Food
10 ounces spinach
3 cups day-old bread cubes (1 inch)
5 large eggs, lightly beaten
1 cup whole milk
1 1/4 cups grated sharp white cheddar
Coarse ground pepper
Preheat oven to 400 degrees. In a large skillet, heat oil over medium-high. Add spinach and cook, stirring constantly, until wilted, about 2 minutes. Distribute bread and spinach evenly into a greased 8″ square baking pan. Sprinkle the cheese evenly over the top.
In a medium bowl, whisk together eggs and milk, and season with pepper. Pour over bread, and bake until set in middle and golden brown on top, 20 to 25 minutes.
Can be prepared one day in advance. Cover tightly with plastic wrap and refrigerate until ready to bake.
