Chili Lime Beer Braised Chicken

I have been vindicated.

No wait….I mean validated. Kind of like a stamp on a parking ticket.

And no, that does not mean I got another ticket…..sheesh……although given my history/experience with CHP and NHP over the past 12 months, it is feasible……..

Anyway, the other day, Sabrina asked me for a recipe – I can’t remember which one – but instead of handing her the recipe binder, I simply replied, “It’s on the blog”.


See kids? I can learn modern technology….

Chili Lime Beer Braised Chicken

I use this chicken for everything – tacos, burritos, nachos and enchiladas – it makes the house smell amazing while it’s cooking too… I love it because (of course) I get to use my slow cooker..

  • 4 boneless skinless chicken breasts
  • Mrs. Dash Fiesta Lime Seasoning
  • 1 tbs. chili powder
  • 1 lime
  • 1 12 oz. bottle of beer (the lighter the better)

Spray the inside of a crockpot with nonstick spray. Season the chicken liberally on both sides with Mrs. Dash and the chili powder. Lay them flat inside the crockpot, squeeze the lime juice over the chicken, then pour in the beer slowly around the edges. Cook on high for 2 hours. Shred the chicken and toss through the juices.
