Blackened Chicken with Cilantro Sauce

Last week, I really surprised myself with my dinner planning.

As in, I had NO plan whatsoever.

I remember sitting at my desk at work, staring off into the distance (which seems to be normal activity for me these days), thinking, “What in the world am I going to make for dinner tonight?”

I think I nailed it:


Blackened Chicken– adapted from Serious Eats

4 boneless skinless chicken breasts, pounded to an even thickness

Spice Rub:

2 tbs. paprika
1 tbs. dried oregano
2 tsp ground thyme
2 tsp onion powder
1 tsp garlic powder
1 tsp cayenne powder
1 tsp fresh ground black pepper

Combine all ingredients in a bowl and set aside.

Sprinkle spice rub over both sides of chicken and grill over medium heat until cooked through, about 5 minutes per side. Serve with mashed potatoes and cilantro sauce.

Cilantro Sauce – adapted from Bon Appetit

1/2 small onion, finely chopped
2 cups chopped fresh cilantro
1 1/2 cups whole-milk yogurt
2 tbs. chopped fresh mint
2 tbs fresh lemon juice
Kosher salt, freshly ground pepper

Combine onion, cilantro, yogurt, mint, and lemon juice in a medium bowl. Season sauce with pepper, and more lemon juice, if desired.
