Lemon Cake Mix Cookies

You know, I’m generally not a huge proponent of cake mixes. I mean, they have their merits – convenient, easy to prepare, most people don’t know the difference – but rarely (read: once a year at best) do I ever use them.

So how is it that I recently found a box of lemon cake mix in my pantry?

Remember that enormous birthday cake that I made for Sabrina’s 16th birthday? For the bottom two tiers, I cheated and used boxed mixes. But before you start throwing the hate shade my way, let me explain. For a cake of that magnitude, for that many teenagers (and mostly, those teenagers that don’t know any better), it was more cost-effective for me to succumb to the mixes than it was for me to make everything from scratch. There was soooooo much cake leftover……in fact, utilizing my astounding math skills, I would estimate that 85% of it went in the trash.

Take that estimate for what it’s worth …. let’s just say that a vast majority of the cake was thrown out…..

So anyway, I had one box leftover and have frequently pondered what to do with it. I have seen quite a few recipes for cake mix cookies (on Pinterest, of course) and never gave them a second glance….until now. A quick search, 3 minutes of prep, 10 minutes of baking, and here you have the end result:

And you know what? While they aren’t something I would go out of my way to make again, they are actually pretty good – and definitely worth the minimal time investment.

Lemon Cake Mix Cookies – adapted from allrecipes

1 (18.25 ounce) box lemon cake mix
2 eggs
1/3 cup vegetable oil
2 tbs. lemon juice
zest of one lemon
1/3 cup confectioners’ sugar for decoration
Preheat the oven to 375 degrees. Line two baking sheets with parchment paper and set aside.
In a large bowl, combine cake mix, eggs, oil, lemon juice and lemon zest. Beat until well blended. Roll dough into tablespoon sized balls and drop into confectioners sugar, rolling to cover completely. Place on parchment lined sheets and bake until set, about 10-12 minutes. Remove from oven and cool completely on the baking sheets.
