I don’t know about you, but I am ready for this weekend. No, I don’t have anything special or unusual planned, it just seems that this week was a bit more hectic than usual.
I surmise, through the astounding intellect I possess (stop laughing!), that it is a direct result of the intense planning and preparation we are undertaking for our big peregrination that is rapidly approaching.
Aaaaaaaaand, my birthday is 14 days away…** happy dance ** .. I have a great idea for my cake (yes, I make my own), I simply need to alter one of the components so one-half of the posse (aka SJ) will be able to partake in it with us.
Oh, and just in case you were disquisitive about this chicken? It was, in a word, out-stand-ing……..

Lemon Garlic Chicken with Herb Salad – adapted from Martha Stewart
6-7 garlic cloves, mashed or put through a garlic press
4 tbs. olive oi
Fresh ground black pepper
5 chicken cutlets, pounded to an even thickness
1/2 cup fresh parsley, roughly chopped
Mixed herb salad (my local Fresh and Easy sells big bags of this blend)
