Applesauce Spice Cake – adapted from Gale Gand
2 cups brown sugar
1 tsp vanilla
2 1/4 cups flour
2 tsp baking soda
1 tsp cinnamon
1/8 tsp nutmeg
2 cups applesauce
Powdered sugar, optionalPreheat oven to 350 degrees F.
In a large bowl, cream the butter and brown sugar until light and fluffy. Add the eggs, one at a time, and then the vanilla, then mix until well blended.
In a separate bowl, sift together the dry ingredients. Add to the creamed mixture alternately with the applesauce. Pour batter into a greased and floured loaf or tube pan and bake until firm to the touch, about 40 to 45 minutes. Let cool in the pan, then turn it out, and dust with powdered sugar.
