Orange Chocolate Chip Bread

I wish I could think of something witty and entertaining to write about today, but alas, my mind is focused elsewhere.

Like on the chocolate chip cookie pie sitting on my kitchen counter.

It’s calling my name. I can hear it. So can Daisy.

Speaking of Daisy, I have to pick up a carrier for her to fly out with us. Sounds simple enough, right?

Well……… not exactly. The maximum height of the carrier cannot exceed 8.5″, per Southwest Airlines’ restrictions.

Daisy is a bit….um…..taller than that.


Houston, I think we have a problem…….

Orange Chocolate Chip Bread – adapted from Sally’s Baking Addiction

1 1/2 cups all-purpose flour
3 tbs. Coach’s Oats ( or use regular oatmeal)
1 tsp. baking powder
1 tsp. cinnamon
3/4 cup granulated sugar
2 large eggs
1/4 cup vegetable oil
1 1/2 tsp vanilla extract
1 cup buttermilk
zest of 1 orange
3/4 cup chocolate chips
Preheat oven to 350 degrees F. Spray a 9″ loaf pan with non stick spray and set aside.
In a large large bowl, whisk together flour, oats, baking powder and cinnamon. In a second bowl, whisk together sugar, eggs, oil, vanilla, buttermilk and orange zest. Pour wet mixture into the dry and stir until combined. Stir in chocolate chips.
Pour batter into loaf pan and bake for 55-65 minutes, or until toothpick inserted into the center comes out clean. Allow bread to cool completely before removing from the pan. Slice and serve!
