We’re rapidly approaching the finish line.
And I haven’t been this excited since my car was delivered last year.
In all reality, I am in complete awe of the way everything has come together over the past few months. I suppose you could credit divine intervention, the sync of the moon and ocean, or good karma.
Or, you could simply say, “It’s about damn time”.
Blueberry Banana Oatmeal Bread – adapted from sugar plum
2 1/4 cups all purpose flour
2 tsp baking powder
1/2 tsp baking soda
3/4 cup old fashioned oats
3 large ripe bananas
3/4 cup granulated sugar
1/4 cup unsalted butter, melted
2 tbs. oil
1 tbs. vanilla extract
2 large eggs, room temperature
1/2 cup plain yogurt
1 cup fresh blueberries
Preheat the oven to 350 degrees. Spray a 9″ loaf pan with nonstick spray and set aside.
In a large bowl, whisk together the flour, baking powder, baking soda, and oats. In another large bowl, mash together the bananas, sugar, butter, oil and vanilla. Mix in the eggs, one at a time, until well blended. Whisk in the yogurt until the mixture is completely blended. Fold in the flour mixture and blueberries just until everything starts to come together. Pour the batter into the greased pan and bake for 50-60 minutes, or until a tester comes clean. Remove from the oven and allow to cool before slicing.
