Almond Butter Protein Bites

One of the most challenging aspects of Sabrina’s nut/bean allergy is that you never know what might set her off. She’s undergone extensive testing throughout her life, and has always been super vigilant about staying away from anything she isn’t 100% completely sure about. Interestingly enough, during the last go-round with the allergist, we found that she can safely consume almonds. The trick is finding almonds that haven’t been contaminated by other nuts. That in itself is a challenge. 

However, we recently discovered the stand up bulk bins at our favorite HEB in Lakeway, and she has been happily munching away since then. We also discovered Barney Almond Butter in the natural food aisle, and I was inspired to make protein bar/bites that wouldn’t cause an allergic reaction.

Almond Butter Protein Bites

  • 1/3 cup oatmeal
  • ½ cup almond butter
  • ¼ cup protein powder
  • 2 tbs agave syrup
  • 1 tbs vanilla
  • 1/4 cup shredded coconut
  • 1/8 cup mini chocolate chips

Grind up oats in a small processor (I use my NutriBullet) – and pour into a medium size bowl. Add remaining ingredients and use a sturdy spatula to blend everything together. Roll into 1″ balls, and store in the refrigerator.

Yield: 8-10 bites
