Artichokes are one of my favorite vegetables, and for years I’ve cooked them the same way – in a triple deck steamer that I’ve had forever.
Strange – now that I think about it, it’s the only appliance that has lasted more than a few years with me ….. and we are NOT going to talk about what happened to one of my slow cookers this morning….
Anyway, now that spring has sprung, I picked up a few chokes at Central Market last weekend. And, given the fact that my Instant Pot isn’t getting nearly the attention it deserves, I did a little research and figured I’d give it a try (and familiarize myself with the machine so I can use it more often).
This is the version I have:
I put the artichokes on the steamer basket, added 1 cup of water, set the timer for 10 minutes on the steam setting, sealed the top, and let the magic happen.
Now I’m really hooked on the Instant Pot – I didn’t realize just how user-friendly it really is. I think I’ll try making yogurt in it later today, while I look for a replacement liner for my slow cooker….
Instant Pot Steamed Artichokes
To trim the artichokes, cut off the stem so the choke sits flat. So people say you can eat them, I personally never have. Cut the upper third of the choke off as well, and discard. Using scissors, trim the sharp edges off the leaves. If you aren’t cooking them right away, rub the cut surface with lemon juice.

Follow the manufacturers directions for steaming, my unit has a “steam” feature and a manual timer. Steam for 10 minutes, and allow the pressure to release naturally.
